Super Easy Shortbread Cookies
- 1 cup Organic Meadow Unsalted Butter, softened
- 3/4 cup Powdered sugar
- 1 tsp Vanilla
- 2 1/2 cups All purpose flour
Preheat oven to 350°F.
In large bowl or with stand mixer, beat butter, powdered sugar and vanilla. Stir in flour. (If dough is crumbly, you can mix in 1 to 2 tablespoons more of butter, softened.)
Roll dough 1/2 inch thick on lightly floured surface. Be creative and cut the dough into small shapes or use cookie cutters. Place cookies on an ungreased cookie sheet but be sure to leave them 2 cm apart.
Bake for 14 to 16 minutes or until set and bottoms are light golden brown. Immediately remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
