Great Pumpkin Muffin or Loaf Recipe
This recipe was submitted to us just after Thanksgiving 2011 by Rachel Vice, daughter of OM producers who live at Birchwind Holstein's. Its makes a soft and tasty muffin or loaf that is great in lunches, for a snack or as a dessert! Enjoy!

Kernel Salad
A delightful combination of dairy, grain and vegetables. This could be a light meal in itself.
Tip: To reconstitute whole or cracked spelt kernels, soak overnight in water. Then place in saucepan, cover with water and gently cook for 30 minutes until tender. -

Vegetable Salad
This is a delicious, quick and easy salad recipe for everyone to enjoy. You can modify it with whatever vegetable you like and is great for cleaning out your fridge. Add this to any meal or enjoy alone.

Whole Spelt Bread
Breads made with whole spelt flour are usually more compact.
Tip: Use 1/2 cup soaked, cooked whole spelt kernels in Whole Spelt Bread recipe and reduce milk by about 1/4 cup.
Tip: Use a blender to crack whole spelt kernels.
