  • Dough
  • 2/3 Cup Organic Sunflower Oil
  • 2/3 Cup Organic Sugar
  • 2 Large Organic Meadow Eggs
  • Zest from 1 Fresh Lemon
  • Pinch Salt
  • 2 + 1/3 cup Organic Spelt All Purpose Flour
  • 1 tsp Baking Powder
  • Filling
  • 4 Large Organic Meadow Egg Yolks (retain whites)
  • 500g Organic Meadow Plain Greek Yogurt*
  • 2/3 Cup Organic Sugar
  • Zest from 1 Fresh Lemon
  • 1 tsp Vanilla Sugar
  • 2 Tbsp. Raisins



  1. In a large bowl, mix together sunflower oil, sugar, eggs, lemon zest and salt
  2. In a separate bowl, mix spelt flour and baking powder
  3. Mix wet and dry ingredients together until a smooth dough is formed
  4. Divide dough into two parts
  5. Roll one part of the dough onto wax paper until it reaches the size of about 12" x 7"
  6. Sprinkle a bit of oil and flour into a 12" x 7" x 2" (3qt.) baking pan
  7. Roll the dough and wax paper together and transfer to the pan - unroll and remove paper


  1. In a large bowl, mix together egg yolks, retaining the whites for later
  2. Add sugar, Greek Yogurt, lemon zest, vanilla sugar and raisins - mix until combined
  3. In a separate bowl, beat egg whites until white and foamy
  4. Add egg yolks to filling mixture and combine
  5. Pour filling into pan, spreading it evenly over the dough

Repeat the dough rolling/transfer steps for the second half of the dough and place ontop of the filling. Poke the top of the dough to create small air vents.

Bake for 45 minutes on 350°F.

Cut into squares while still cooling, to avoid cracking.

Once cool, sprinkle with icing sugar and serve.
