Fresh Vegetables In a Pita Pocket

Ingredients:

  • 4 tbsp. low fat pressed cottage cheese
  • 4 tbsp. yogurt
  • 1 tbsp. mayonnaise
  • 1 tbsp. chopped fresh basil or 1/4 tsp. dried
  • Grind pepper to taste
  • 1/4 cup chopped red pepper
  • 1/4 cup chopped green onion
  • 1/4 cup chopped cucumber
  • 1/2 sliced avocado
  • 1/4 cup chopped cheddar cheese

Directions:

Whisk together the cottage cheese, yogurt and mayonnaise.  Stir in basil and pepper.  Stir in the chopped vegetables and cheese.

Place inside a pita pocket.  If you wish you may add sprouts.

Delicious for a lunch or supper meal.
