The culture in Organic Is there rennet added to Organic Meadow cheeses?
All of our cheese is rennet free with the exception of the old cheddar . Rennet has to be added to aid in the setting process for the cheese to form a block.

Why is calcium chloride in the cheese?
Calcium chloride is in the cheese to aid in the setting of the cheese - it helps make cheese firm. Calcium chloride is an organically approved product.

What cultures are used in Organic Meadow’s light cream cheese?
Lactococcus lactis and Lactococcus cremoris.
